‘Granny knows best’: Meals you can freeze for later

Some tips for cooking ahead:
–   Breaded chicken lends itself to mashed potatoes and gravy, to chicken parmesan, or even a breaded chicken hero sandwich.  Bake in advance, freeze, and it’s there for you when you want it
–    Meatballs made in different sizes can be meatball heroes, a great addition to homemade pizza, spaghetti and meatballs, or even soup
–  Freeze on a parchment or waxed paper lined cookie sheet
–   Transfer to plastic bags
–   Label bags with date and item
Tortellini Soup    Prep time 10 minutes    Cooking time 20 minutes  Serves 4

1 – 1 ½ quart organic low sodium organic chicken broth
20 small meatballs
½ package tortellini
½ pound organic carrots chopped
Sage, thyme, salt, pepper
2 cups chopped organic baby spinach

Heat broth in large pot
Add chopped carrots and herbs to taste
Simmer 10 minutes or until carrots are tender
Add meatballs and tortellini
Bring to boil and simmer 5 minutes or until tortellini are cooked
Add chopped spinach and simmer 1 – 2 minutes
Serve with a sprinkling of Romano cheese

Mix together
1 lb ground beef, turkey, or bison
½ – ¾  cup bread crumbs
½ – ¾  cup grated Romano or Parmesan
½ tsp dried onion or
1/8 tsp dried garlic
1 tsp dried parsley
1 egg
¼ cup cold water (could be a bit more or less) enough to make the meat mixture soft but easy to handle

Roll meatballs to desired size
Place on parchment lined cookie sheet
Put in cold oven, turn oven up to 400 degrees
Bake 18 minutes, turn over, bake 6 more minutes

Low-Fat Chocolate Pudding  10 minutes prep and cook
Put in a saucepan:
½ cup sugar
1/3  cup unsweetened cocoa
2 TBS cornstarch

Beat together:
2 ½ cups low or non-fat milk
2 eggs

Stir the milk mixture into the cocoa mixture and heat until it comes to a boil, stirring constantly

Remove from heat and stir in:
½ TBS vanilla
1/3 pat butter

Stir occasionally while cooling.  Place in dessert cups.  Serve with whipped cream.
Note: With 1 more TBS cornstarch, this makes a great chocolate cream pie filling
