LEXINGTON, Ky. – With tortilla and salsa booming across the country, students at University of Kentucky can now take a course on tacos.

University of Kentucky is offering an undergraduate course this semester called “Taco Literacy: Public Advocacy and Mexican Food in the U.S. South.”

The university says their state has one of the fastest growing Latino populations in the country and tortillas and salsa are currently outselling bread and ketchup in the United States.

The class, which posted its syllabus online, will look at the growth of Mexican food in their area as well as eat tacos and write about it.
